Ingredients

  • Bloom Organic Foxtail Millet (whole) – ¼ cup (Shop Now)
  • Milk – 2 cups
  • Water – 1½ cups (for cooking millet)
  • Bloom Organic Jaggery (grated) – ¼ cup (adjust to taste) (Shop Now)
  • Saffron strands – 8–10 (soaked in 1 tbsp warm milk)
  • Cashews – 1½ tbsp, chopped (Try Yupik Cashews)
  • Raisins – 1 tbsp (Try Yupik Raisins)
  • Ghee – 1 tsp (optional)

Method

Soak the Millet (Important)

Step 1- Start by washing the foxtail millet thoroughly 2–3 times under running water. This removes dust and excess starch. Soak the millet in plenty of water for at least 8 hours or overnight.

Cooking Tip - This soaking step is essential. It helps soften the grains, improves digestion, reduces cooking time, and gives the kheer a naturally creamy texture once cooked.

Cook the Millet

Step 2 - Drain the soaked millet completely. Add the millet to a pressure cooker or a heavy-bottomed pot along with 1½ cups of water.

Cook until the grains become soft and fluffy:

  • Pressure cooker: Cook for 2–3 whistles.
  • Open pot: Simmer for about 20–25 minutes until tender.

Step 3 - Once cooked, lightly mash a few grains using the back of a spoon. This small step releases starch and helps create a thicker, richer consistency similar to traditional rice kheer.

Build the Kheer

Step 4 - Add milk directly to the cooked millet and place it on low heat. Bring the mixture to a gentle simmer and cook for 10–12 minutes, stirring occasionally to prevent sticking. Slow cooking allows the milk to thicken and absorb the nutty flavour of the millet.

Step 5 - Add grated jaggery along with a small pinch of salt. The salt may seem surprising, but it enhances sweetness and balances flavours beautifully. Stir continuously until the jaggery dissolves completely. 

Step 6 - Now add the saffron milk along with a few extra saffron strands for aroma and colour. Add chopped cashews and raisins directly into the kheer. Let everything simmer together for another 2–3 minutes, allowing the flavours to blend and the nuts to soften slightly.

Step 7 - If using ghee, you can lightly roast the cashews and raisins beforehand for an extra layer of richness. Your Foxtail Millet Kheer is now ready; creamy, fragrant, and naturally sweet.
