Recipe: Rice Poha

𝗜𝗻𝗴𝗿𝗲𝗱𝗶𝗲𝗻𝘁𝘀:
Bloom Organic rice poha - 1.5 cup
turmeric powder - 1/4 tsp
peanuts- 2 to 2.5 tbsp
oil - 2 to 2.5 tbsp
mustard seed - 1/2 tsp
cumin seeds- 1/2 tsp
1 chopped medium-size potato
finely chopped onions – ⅓ cup
8 to 9 curry leaves
fresh grated coconut – 1 tbsp (optional)
chopped coriander leaves – 2 to 2.5 tbsp
lemon juice - 1 tsp salt to taste


Preparation

  1. Rinse the poha flakes in clean running water in a strainer or colander twice or thrice. Note: Be sure that you do not rinse the poha flakes too much or else they break and get mushy. While rinsing, the poha flakes absorb enough water and they become soft.
  2. After rinsing, the poha flakes should lose their crunchiness and when you break them between your fingers, they should easily get crushed or mashed.
  3. In a pan, heat oil. Add mustard seeds to the hot oil.
  4. When the poha has softened nicely, sprinkle the turmeric powder and salt evenly on the poha. 
  5. Gently mix with a spoon or with clean fingers.
  6. Peel the potatoes and chop them into small cubes.
  7. When the mustard seeds splutter, add the cumin seeds.
  8. When the cumin seeds crackle, add potato and saute. 
  9. Next Add onions. Sauté the onions till they become translucent and soften.
  10. Now add the curry leaves and roasted peanuts. Sauté for a minute on low heat.
  11. Add the fried potatoes and then the rinsed poha. Mix gently with the rest of the sautéed ingredients.
  12. Cover the pan tightly with a lid for the poha to get steamed for about 2 minutes on low heat.
  13. Remove the lid and garnish with chopped coriander leaves and grated fresh coconut and lemon juice.
  14. Serve the poha hot. You can add chopped green chilies to add spiciness to the dish.
