Buckwheat is a seed that is classified as a cereal grain since it cooks like other common grains. Hulled buckwheat groats have had their outer shells removed to reveal a light color and a three-dimensional pyramid shape. Nutty in flavor, buckwheat groats are tender in texture once cooked, and can be used in both sweet and savory applications!
